SUNDAY BRUNCH + PALEO WAFFLES!?

You read the title above correctly! It is definitely possible to eat Sunday brunch with your family that is both Gluten and Lactose Free! Let's jump right in!

Of course everyone in the family, that drinks coffee, knows what he or she likes which means that you do not have to worry about that! First, it is time to make the waffles. When I made these waffles, I used the Birch Bender's Paleo Pancake and Waffle Mix, and the best thing about this mix is that only need water! These are super easy to make, especially in a waffle maker! On top of the waffles, I put the Country Crock Plant Butter as well as the Maple Grove Farms Sugar Free AND Low Calorie Syrup. This is only the main portion of brunch! On the side, I made turkey bacon and there are many brands that you can choose from, but for me I like the Butterball one and chose to cook this on the stove. For future references, to get a more crispy bacon strip, it is best to cook the bacon on the stove, however cooking the bacon an oven or toaster oven will help limit the amount of bacon that gets burnt, haha! If anyone wanted to go one step further, you could also make a tofu scramble on the side to replace scrambled eggs.

This may seem like a small brunch, however I can assure you these waffles are super filling and they surely fill the hungry hole. My family was pretty please when we all had this breakfast together. The only topic that was brought up was about the taste and texture of the waffles. For me, I did not taste much of a difference because I have been gluten and lactose free for over a year now. But also, my family could clearly taste the use of the little bit of Almond Oil that I threw in the mixture of the waffles (that is totally optional), and they thought it made them taste funny. I still thought that they were pretty bomb waffles! If you are in need of a healthy Sunday brunch here you go! You could even add some fresh berries on the side or make a smoothie instead of having coffee! See ya!
