GLUTEN & LACTOSE FREE FRIED CHICKEN

This chicken is SERIOUSLY amazing! All taste buds are going to be having a party after this one! You are about to know how to make gluten and lactose free fried chicken PLUS delicious sides. Didn't think it was possible? Come find out!


INGREDIENTS

~ Boneless Skinless Chicken Thighs OR Tenders (Preferably Thawed)

~ Fresh Broccoli

~ Mahatma Jasmine Rice

~ Pioneer Gluten Free Gravy

~ 4C Crumbs Gluten Free Plain

~ ENERG Egg Re-placer

~ Extra Virgin Olive Oil


PREPARATION

~ Lay 3 bowls out on a surface

~ In Bowl 1, pour flour and seasoning in and mix it

~ In bowl 2, pour bread crumbs and seasoning in and mix it

~ In bowl 3, use the egg re-placer to make an equivalent of 6 eggs

~ In a sauce pan pour 3 cups of water in and set on burner

~ Grab a cutting board and chop up the fresh broccoli

~ In another sauce pan, place a steamer inside and cover the bottom of the pan with water and set on a burner

~ Place a frying on a burner and fill the pan about half way with Extra Virgin Olive Oil and turn the burner to medium heat

~ Grab a small sauce pan and pour 1/2 cup of water in and place on burner

*THE ONLY BURNER THAT SHOULD BE ON IS FOR THE OIL!!!* :)



INSTRUCTIONS

~ Follow the "February" saying for fried chicken (FLOUR, EGGS, BREAD CRUMBS) for all of the chicken and place on a baking sheet

~ Place the freshly cut broccoli in the designated pan and turn the burner to medium heat

~ Turn the burner for the jasmine rice to medium heat and bring to a boil

~ Once the oil is heated through, CAREFULLY lay the chicken the frying pan and cook for 10-12 minutes

~ When the water is boiling for the rice, YOU KNOW THE DRILL, pour 2 cups of rice in, stir, reduce heat, and simmer for 15 minutes or until all water is absorbed!

~After the first side of the chicken has cooked for 10-12 minutes, flip the chicken and cook for another 10-12 minutes

~ Turn the burner to medium heat for the small sauce pan, which we will be making the gravy in

~ In a separate bowl mix together the Pioneer Gluten Free Gravy packet and 1/2 cup of cool water until there are no more lumps

~ When the water is boiling and the gravy is thoroughly mixed, combine the two

~ Stir the gravy on the stove until it is thickened and then turn the burner off

~ When the broccoli is a vibrant, healthy green turn the burner off

~ Once all of the water is absorbed with the rice, turn the burner off.

~ Double check the chicken and make sure it is at 165 degrees F or higher

~ When the chicken is fully cooked turn off the burner


SERVING INSTRUCTIONS

~ Grab a baking sheet and line it with paper towel

~ Place all of the chicken on the baking sheet to help soak up the excess oil

~ Make sure all burners are off


This meal takes a bit more work BUT it is totally worth it! Plus, these bread crumbs really had that extra crunch which is what we want! Just because we have to be even more healthy than the average person, does NOT mean we have to miss out on this type of deliciousness!
